The evaporator coil in a split AC is basically the cold part inside the indoor unit. It absorbs heat from the air in the room. That is its main job anyway. I think most people do not think about it much since it is hidden behind the plastic cover on the wall unit or sometimes in ceiling ones.
Location wise it sits right there in the indoor setup. Materials are usually copper for the tubes and aluminum fins to help with the heat transfer. Some fancier models have coatings like Blue Fin to stop corrosion. Not sure if that makes a huge difference but it sounds helpful.
When the AC is on the refrigerant comes in as a cold liquid after the expansion valve. The fan blows warm air over it and the refrigerant soaks up that heat. Then it boils and turns into gas at low pressure. The air gets cooled and goes back into the room. That process seems straightforward but it is key to everything.
In the whole cooling cycle there are four big parts. The evaporator coil handles absorbing the heat indoors where the cooling actually happens. Then the compressor outside pumps the gas and pressurizes it. The condenser coil lets the heat out to the outside air. And the expansion valve controls how much refrigerant goes back into the evaporator.
