The whole thing with a yogurt plants heating and cooling setup is basically keeping the temperature just right through all the steps, like from handling the milk to letting it ferment and then storing it at the end. If it shifts even a bit, the yogurt ends up with weird texture or off taste, or worse, it might not be safe to eat. I think thats the main point, you know.
Heating comes in early as this big first step. It handles pasteurization and getting the milk ready. Then theres cooling for controlling the fermentation and keeping it stored properly. And those shifts between hot and cold are super important for how the texture turns out and what the bacteria do. It seems like without that control, everything falls apart a little.
This kind of system shows up in dairy processing places, or those big commercial yogurt factories, even smaller production units if theyre making it on a bit of a scale. Not like home stuff, but more organized.
For the heating part, they use plate heat exchangers, which I guess are pretty common, and pasteurizers, plus hot water or steam to make it work. Balance tanks help too, to keep things steady. What it does is kill off the bad bacteria through pasteurization, and it changes the milk proteins so the texture gets better, thicker maybe. It sets up the milk for the fermentation to happen right after.
The typical way they heat it is up to around 85 to 95 degrees Celsius, thats like 185 to 203 Fahrenheit, and hold it there for a few minutes. This is tougher than what they do for regular milk, because yogurt needs that extra body to it. I might be oversimplifying, but it feels like thats why they push the heat higher.
Cooling ties back in later, but the heating really starts it all off.
